Roasted Butternut Squash Pie

2/3 cup shortening (Crisco)
1/4 cup sugar
One egg
Orange juice, 1/2 cup
Two tablespoons of grated orange peel
2 cups of flour
Baking powder, 1/2 teaspoon
Baking soda, 1/2 teaspoon
Half a teaspoon of salt
Preparation
Sugar and cream shortening.
Add egg, orange juice, and orange rind.
Mix dry ingredients in a large bowl.
Add the shortening slowly to the mixture.
Drop teaspoon by teaspoon on ungreased baking sheets.
Bake at 400degF between 8-10 minutes.
Cool. Frost.
Frosting
2 cups of powdered sugar
Butter 2 tablespoons
Orange rind, one tablespoon
Orange juice, 2-3 tablespoons
Makes two dozen. These are so popular that I always double the recipe.
