I love living in the Pacific Northwest because of all the fresh berries. Fresh berries are readily available all year long, so we can enjoy them whenever we want. It tastes just like summer.

It’s easy! The dessert is so easy to make and simple. The bowl of sweet, ripe berries is topped with a lovely, light, orange-infused whipped cream.

This is the perfect dessert for a heavy dinner.

Ingredients Required

  • Fresh Berries. A combination of blueberries, strawberries and raspberries.
  • Sugar
  • Fresh Orange Juice
  • Heavy Whipping Cream

How to Make Berries and Cream

Use fresh berries. Start by combining about 1 cup of blueberries, strawberries and raspberries or other berries. I cut the strawberries.

Mash the berries. It’s a strange word. What does macerate refer to? This is essentially letting the berries soak up juice and sugar. Cover the berries with sugar and orange juice. Mix well. Let the berries rest for about an hour. The berries will release their juices, creating a delicious sweet syrup. The berries do not have to be refrigerated while you are doing this.

Prepare a simple syrup. As the berries are being masked, prepare a simple orange-flavored syrup. This will be folded in the whipped cream. Directions are below.

How to Make Simple Syrup

  1. Mix sugar, orange juice, and orange zest.
  2. Place sugar in a small saucepan and heat on medium.
  3. Allow mixture to simmer about 10 minutes to allow syrup to begin to thicken.
  4. Add the syrup to the whipped topping after it has cooled.

How to Serve

Serve with homemade whip cream. Here are the instructions.

You can leave out the vanilla and sugar in the recipe of whipped cream for this recipe, as you will sweeten it with orange simple syrup. You can serve it with regular whipped cream if you don’t like oranges.

Spread the orange cream on a pretty plate and top with the berries, juice and whipped cream. Do not tell anyone, but I ate 2 bowls the night that we had this! !

Ingredients

  • 1 cup strawberries sliced
  • 1 cup raspberries
  • 1 cup blueberries
  • Half C Sugar
  • Fresh Orange Juice, 1/2 C
  • Heavy whipping cream, 2 C

Instructions

  • Mix the sugar with orange juice, rind (if using), and any other ingredients into a small saucepan.
  • Bring to a rolling boil and stir until sugar is dissolved
  • Stirring is not necessary for the first 10 minutes.
  • Cool syrup
  • Whip cream medium peaks
  • Whip cream with orange syrup.
  • Serve over berries
  • If you are making regular cream only, add 1 tsp of vanilla and 2-3 Tbsp of powdered sugar. (Add more to your taste). Whip until soft peaks appear.
